For the salad:
- 5large tomatoes(tomatoes on the vine are best), quartered
- 1English cucumber, peeled and sliced
- 1/2large red onion, sliced
- 2 tablespoons chopped fresh parsley
- 2tablespoons chopped fresh cilantro
- 1pinchkosher salt +1pinchblack pepper
For the vinaigrette dressing:
- 1/2cup olive oil
- 1/4cupred wine vinegar
- 1 teaspoon kosher salt + 1 pinch freshly ground black pepper
- 1garlic cloves, minced
- 1/2 teaspoon honey or brown sugar (optional for low-carb, Keto, or sugar-free diets)
- 1teaspoon dried oregano

How to make the tomato cucumber salad
You’ll find all the ingredients at your favorite grocery store, or, better yet, in season at your local farmer’s market.
This salad recipe is super easy:
- Combine all the vegetables, herbs, salt, and pepper in a salad bowl.
- Combine all the dressing ingredients.
- Pour the dressing over the salad and toss to combine.
- Refrigerate and serve.
We like to use dried oregano in the vinaigrette dressing, but feel free to add your own twist: dried dill, basil, or tarragon.
