This was quite good! I had about 3 lbs of russets to use up, and my kale bunch made 8 cups. Used vegetable broth, smoked chicken sausage, and tons of black pepper. Didn't have kidney beans, but Great Northern worked fine. Nice versatile soup template.

I used russet potatoes instead of small potatoes. I didn't bother mashing up the potatoes. I added 1 can of chicken broth. The soup is so tasty and healthy.

Made this for my family who loved it! I also used a russet potato and didn’t smash it, and used all chicken broth instead of water. I used Hillshire Farms Kielbasa sausage and didn’t need any additional fat or oil. The rendered fat from the cooking was enough for the onions and the broth, and the sausage didn’t need the oil to brown.

Made almost exactly according to the recipe (subbed spicy andouille for the kielbasa) and it required a ton of salt to be flavorful, despite the spicy sausage. I would definitely use chicken broth instead of water next time. Otherwise a great way to use up many ingredients I had on hand!

Good soup, used yukon gold potatoes and added a parmesean rind and red pepper flakes which was good (but I know not for everyone). Very hearty and like that it can be GF/DF.

such a great soup

This is such a satisfying meal.It’s been in the 89 s for weeks in Colorado, and today, May 20, it’s snowing. Putting out fires we hope.And I can make this soup. It’s great.No oil, the sausage gave enough. I had a couple aging jalapeños in the frig and they gave it a nice kick.Add anything you like, you can’t mess this up.

Made this with Trader Joe's soy-chorizo instead of sausage, and Marcella white beans instead of kidney beans. Very tasty, and a quick pantry meal.

nice basic fast dinner

Made pretty much as described, also no oil as the kielbasa was enough. Chicken broth, and a healthy dash of sriracha. Looking forward to the leftovers.

My hack for mashing the potatoes (which seemed messy and difficult) was to use and immersion blender. I dont know if it approximates what you get if you mash the potatoes but the broth was silky and delicious. I also used russet potatoes.

If properly salted, this soup was delicious without the chicken broth that many people substituted. It really was divine for a cold day! I’m guessing the better quality your kielbasa, the better the flavor will be. Garbanzo beans also worked nicely.

Yum! Baked some fresh french bread to eat with it. Used chicken broth instead of water, and only partially mashed potatoes in the liquid to thicken it a little. It was delicious.

I thought it was too much kale to get kids to eat. Also, I didn't smash the potatoes and it was delicious. It was a lot better the next day. Any kind of sausage would do -- next time I am going to try chicken.
